Ed, Welcome to the group.
Fred Weick, the Ercoupe's designer, was 6' 4" tall and he fit just fine. It DOES help a lot for you tall guys to have a plane with no rudder pedals. Even at 5' 11.5" I found that the pedals cramped my knees some and my passengers' legs a lot. Passengers are sometimes fearful about touching the pedals in flight and crashing the plane so they contort themselves to avoid touching the pedals. I sometimes have the passengers rest their feet on the pedals and push a pedal to the floor so I can show them that I can control the plane just fine even with full pedal deflection. It makes the nervous ones much more relaxed about accidentally touching the pedals. For head height, make sure that your seat cushions aren't too thick. My original upholstery wasn't as thick as that in some other Coupes in which I've ridden. In the other Coupes, my head would touch the window overhead. Not in my Coupe with the original (thinner) upholstery. If the Coupe you buy has thick upholstery, you can get it adjusted so it's not a problem. The Coupe will probably be a good choice for you. They fly just fine with no rudder pedals and they're more fun overall than most any other certificated plane flying.
