The requirements are different for pre FAR 21 aircraft (thankfully).. CAR3 aircraft (Ercoupe) only has to have upholstery that is burn resistant, not fireproof. All commercial automotive and marine upholstery material meet a federal burn resistance standard that meets the CAR3 standard. This is called out in FAA AC 43.13, and your auto upholstery shop will have burn cert cards for the material they buy. I had a local auto shop do all my upholstery and it was pretty cheap. Remember, in an Ercoupe the upholstery burning wont kill you, the header tank will.
