Has anyone done this conversion

Yes, several times

and are there any benefits to using the O-200 crank over the C-75 crank?

How about much improved climb performance?

Does anybody know if the metallurgy is any better on the more modern crank?

None that I'm aware of.

Any drawbacks that anyone knows of?

If you need to replace your crank, a good C75/85 crank will probably cost as much as a new O200 crank. If you're doing an overhaul, you'll be replacing the pistons anyhow (you need O200 pistons). Two things you'll need that's extra is a set of O200 rods. and the STC, so, it'll cost a little more, but refer back to question 2...

Make sure that the person building the engine knows what they're doing because the clearance between the rod bolts and the cam is critical. Also, your case may require machining in the oil slinger area.
