 EAA has excellant videos on the subject.  I still use the old video by Ray Stits.  There is nothing difficult to it.
Contact EAA for a recent copy.  There must be tons of helpful publications out there and it really isn't Rocket Science.   It's a fun job really.

I'm just thinking, but would be very surprised to hear that the mechanic you entrust to do, at least your annuals, can't do this.  That makes me cringe.  I hope he declined because he's too busy.
 
You have a few options.  Contact your local EAA chapter, of which you should be a member anyway, and see what they can suggest.  Plenty of aeroplane history in your neck of the woods, so there should be plenty of fellows willing to do this with you.  My own suggestion is to take the class and cover them yourself, while a mechanic supervises.  It'll be rewarding and informative.  You'll fly knowing that the wings are in the best shape you know of to carry your loved ones, and that the job couldn't be done better or more economically.  The old method using rolls of fabric isn't too bad, the new method of using pre-sewn envelopes is a snap.  In any event, get involved and do your part in ensuring this basic skill is passed along.  If all else fails, you may have to ship them off and have them done, or fly in somewhere and leave the plane.  Good luck and keep us posted.  I may want you to come to Texas and help me cover my wings!
