David,
"When the nose wheel is fully extended, is it still linked to the steering
system?"
Yes, of course.

"Without rudders, what is the technique for cross-wind TAKE OFFS?"

Set the trim for cruise . - on mine that is fully forward.

You can try to push down on the elevator to keep the nose down, but I found
that I always was pushing to hard, thus pressing the front tire wayy too much
on the concrete. Using the trim will add the right force naturally when needed.

"How do you handle short field and soft field take-offs where the nose needs to
come up early and the plane needs to get off at minimum speed so it can
accelerate in ground effect?"

This is where every rudder pedal pilot will get you.
As long as there is no crosswind, all is fine, but with cross winds, you are in
the conflict to steer the plane down the grass, but wanting to have the nose
off the ground ASAP.
I found that the trim method works again best here, since the pressure on the
nose is enough to keep the plane on path , but not so much that you would loose
speed because of the nose pressed into the soft field.

My bird is in the shop (the annual bank account flushing system) The rudder
pedals are coming out.

QUESTION: When the nose wheel is fully extended, is it still linked to the
steering system?

QUESTION: Without rudders, what is the technique for cross-wind TAKE OFFS?

Seems like one would hold the nose down, steer with the yoke, and rotate at
take off speed

  BUT

How do you handle short field and soft field take-offs where the nose needs
to come up early and the plane needs to get off at minimum speed so it can
accelerate in ground effect?
