Being half a bubble off level isn’t too bad.  Did you turn the plane around
the opposite way and use the bubble level again to make sure the floor
doesn’t have a subtle tilt?

 

Your strong crosswind landings and takeoffs won’t be normal for Coupes but
they may not get into the dangerous range as long as everything stays
optimal.

 

You also quantify it by measuring the tail at 73 inches.  Compare that to
normal of 75” for a single fork nose gear and about 76½” for a double fork
nose gear.

 

So, you are somewhere around 2” to 3.5” tail low.

 

Personally, I’d download the instructions from Skyport’s website (down at
the bottom of the page) and follow those instructions to calculate the
correct shim thickness, get some and install them.  That way, as the donuts
compress, the air in the tires gets below optimum pressure or anything else
happens, you won’t be sagging into the too-high-angle-of-attack range that
can cause problems.
