Hi Jason,
I just had a quick look at it, and it looks to be a
gui initialisation bug. The file size indicated on the gui
should change to the correct 1 band value if you hit 
the default button, or toggle the 
chooser to rgb and back to multilayer.
I also noticed that it only happens on the file type "UDF (.ers)",
and not the "ER Mapper Raster Dataset (.ers)" option.
(NOTE from memory, the difference between these two formats is that UDF also generates
a .hdr file).

In any case the file saved out should always be the correct size (ie not 
3 greyscale bands).
