These things really sound like you would want a configuration management tool (puppet, cfengine, etc.) to set those things after the kickstart is complete.

Depends. If you are installing a system for use in a disconnected environment the install needs to be correct by the time the install is done. You /can/ run the configuration management tool locally and remove the tool when you are done, however. That's still a possibility depending on requirements.
