I'm running ethereal using an X Server on MacOS X for some time now. It is fully usable.
The pnly thing not suported under MacOS X are te plug-ins. This is due to some problems with libtools.
A native GUI would be fine, but make sure that you can still use the developments made the dev-community.
I think the ethereal code is coupled with the glib stuff. The GUI stuff is only available the ethereal code, but not in the tethereal stuff. That could be a start of the investiation.
