Not sure of a graceful way to terminate a process based on a condition external to tethereal, but you could certainly set autostop conditions (stop capture after a certain amount of time or after a certain number of bytes had been captured) or set number of packets to capture.
See the tethereal manpage (http://www.ethereal.com/tethereal.1.html) for more details on tethereal command-line options, including autostop.
