Cron would also be appropriate for most other *nixes besides Linux.

Not sure of a graceful way to terminate a process based on a condition external to tethereal, but you could certainly set autostop conditions (stop capture after a certain amount of time or after a certain number of bytes had been captured) or set number of packets to capture.
