The command line version of Ethereal is "tethereal". Running "ethereal" from the command line will start the gui, and there must be a windowing system running to start the gui on. Running tethereal will use the text interface. This is probably what you want. If you have X running, and want to use gui ethereal but it isn't working, make sure you have the variable "display" in your environment.
