I have resolved the problem; it simply was a path issue.
I hadn't realized the mini example was being built during the "big" make
process of Etherlab master.
But I still have questions:
1) How can I stop the "mini"-module? "ethercat stop" issues an error
message ("Module ec_8139too is in use").
2) What would be the development cycle for changes to the "mini" example?
Would it be like
Edit mini.c (or any other source file)
make modules
make install
make modules_install ?

The logged messages are like:
ec_mini: no symbol version for ecrt_master_send_ext
ec_mini: Unknown symbol ecrt_master_send_ext
(this is one example - there is a long list of ecrt_* symbols which
leave all these messages)
