I don't know about iChat, but there is a Jabber/XMPP standard for using ZeroConf/mDNS.

Although in this case, it seems you don't really run a complete server locally. It just defines a way to discover users and find the open port to talk directly to the Jabber client.

David, have you looked at other Jabber/XMPP libraries? I did a brief search a little while ago, and iksemel and gloox looked somewhat promising. (Unfortunately, gloox is GPLed, so it would fit less well with etoile.)
