yes, this is indeed possible. it is done all the time by folks who package
live music for pressing onto CDs you buy at the store...

I use the Roxio EZCDC 4 and you are correct, it does not have a clue
how to do what you're asking it do.

what you really need is a program that allows you to edit/process PCM-
coded WAV files. for this you have a lot of choices out there and only
your budget makes the final determination.

possibilities:
- Sonic Factory Sound Forge or Sound Forge XP (XP is $60 as a
  download)
- Syntrillium Cool Edit or Cool Edit Pro
- CDWave (etree's 1st choice in "tracking" software)

I own Sound Forge XP and use it for dealing with the wave files I
record of my kid's school band and it has a lot of processing options
available.

The CDWave option is the least desirable since all you would be able
to do is chop off the crowd noise and really what you want to do is
gently fade it out between tracks so that the applause isn't 3 minutes
long...  Sound Forge XP does have a "fade" processing option that
allows fading in & out so that might well be your best deal.

after processing the tracks and getting rid of the excess crowd noise,
you trim the silence and then take the "new" tracks into EZCDC4 to
burn the tracks to CD.
