Hi Jason,

Do you get any messages from your logging system (klogd)?
look in 
/var/log/messages (or a similar path).  Using 'less' or some other viewing program 
look for messages around the dates and times when the cpu is maxed out.

Also, in your log directory, you may find other useful log files that will provide 
some clues.

Which distribution are you using? And which kernel version (uname -r)?  Which version 
of the syslogd package? If you got an rpm, the version should be in the name or 
/sbin/syslogd -v
