I use /etc/procmailrc to point to a series of includes in /etc/procmail that filter junkmail and viral/worm activity. It sanitizes headers, alters suspect attachments so they require a bit of thought by the user to open, rather than auto-opening via outlook. This set of filters operates on all email that comes into my mailserver. This server hosts POP/IMAP/SMTP for 100+ domains.
