Do they host their own email? If so, I would suggest they have their isp host it, then have them dial in and retreive and parse it. The ISP could deliver *@customer.com to one large pop3 mailbox. Fetchmail can then retreive the mail and deliver it to a mail spool/smtp server.
A simple script would then try to connect to the internet. Upon success run fetchmail, upon failure start the dialup and run fetchmail. Or just put fetchmail in daemon mode checking every 5 minutes. A script would then check for internet access every 5 minutes and run the dialup if need be. If they don't have a stable connection (dialup is not stable) then they shouldn't host their own incoming mail server. If they do they will experience long delays for individual messages. Many mail servers will try a server and pause for 15 minutes the first time it's unavailable. Then it may wait 1 hour, 2 hours and 4 hours for consequent times, then try again every 4 hours for 5 days. So if the wireless or dialup goes down at the wrong times, certain emails could be delayed 15 minutes to 4 hours or more.
