Many people do.
One customer sent me info that was proprietary to his organization, in the clear, via email, to a support address that's automatically stored in a database. Info like, server IP, some admin usernames and passwords.
Then, he asked that the data not be stored in our systems.
Obviously he's never heard of carnivore, and this is a system administrator of a large company....
First off, you're most likely transmitting your information unencrypted. That should be the biggest give-away that your medium is not safe.

I'd treat an email as I would treat a phone conversation as I would treat a physical presense converstation if there were other people in the area. In all of those cases I'd probably use code if I had something to say that was moderately important. If I had something that was really "private," I'd not trust it in any of those cases, regardless of what laws allow who to view them.
Most people using email expect the same privacy that they get with USPS mail, and many of those same people think USPS mail is very secure.
It's also a sad state for encryption. As it is, I've never received an encrypted email. Sometimes I think that there is a vested interest in keeping encryption out of general use.
It's more of a lack of exposure and ignorance. People don't think it's necessary.
