if you can. Install Firefox and remove the IE icon from the desktop. Windows Update will always default to IE so don't worry about that.
Luckily I have little to do with XP configuration at our shop, but I do know that spyware is a real nuisance for the sysadmin. Removing the IE icon will help, but some people may find IE and use it anyhow. If you have ad-aware or whatever already installed, and maybe a bookmark to get the database update, plus some instructions, you can save yourself some time cleaning out infected PCs by instructing people over the phone.
I don't know how practical this is in your situation, and behind the firewall, but installing cygwin would provide you with a unix like environment when you have to deal with the XP boxes.
