Moodle is specifically developed for this purpose. <http://moodle.org/>. Tons of modules and plug-ins. You might also take a look at ICE, < http://ice.usq.edu.au/introduction/about.htm>. It's far less mature but has some whizzy features in terms of working from OOo or MS Word. Integrates with the outstanding Zotero research assistant plug-in for Firefox 2.x., < http://www.zotero.org>.
