The alternate Ubuntu installer (NOT the live CD) has an automatic install
option for "full" disk encryption. I put it in quotes because it will leave
you with an unencrypted 250mb boot partition, but everything else is
encrypted with a passphrase that you have to enter at boot time.

I haven't tried it yet, but I have a Dell Ubuntu laptop on the way and I
plan on reinstalling using this method as soon as it gets here.

I heard that the performance hit isn't too noticeable, but that is all going
to depend on the speed of the hardware.

Oh, and in a somewhat unfortunate (only because of the crime) child porn
case they ruled that the accused's passphrase was content of his memory and
thus he was covered under his 5th Amendment right against self
incrimination. Personally I'd like to see the guy in jail forever, but the
rights of the many are more important than the punishment of one sick
individual.

Hope that helps. Good luck!
