OS X isn't particularly hobbled as far as unix or open source software. It comes packaged w/ the standard unix utilities and you aren't prevented from building or installing anything you want.
You install X-Code (free apple provided download) and you have GCC and a bunch of other software development tools including an X-server that let's you run pretty much any unix software that supports a GUI, including gimp and openoffice. Most of the moral issues for Macs have to do with media files and the purchase, sale, illicit copying and display thereof.
