It's a form of PR for the conference. I agree with this: if someone sees an interesting talk video, they may be more encouraged to go to the next conference if they were already tempted to do so; if they weren't inclined to go, at least the speaker reaches some more people. I probably wouldn't go to some of the big open source conferences, but the videos are useful to reach (and at least try and persuade) people like me.
