I can't answer your question either, but I can tell you that I have done fits to published motor curves using JMP, and usually a 2nd order equation is good enough for an R^2 of 0.98 or better. For torque as a function of rpm, you need only fit the part of the curve greater than base speed, as below that torque is constant.
