I'm not aware of any OEM system that uses DC motors so I suspect that
your 10kw motor is really a permanent magnet synchronous AC motor.
It's generally never a good idea to try to drive more than one motor
with one controller - even more so if they are PMAC or PMDC since such
motors are very sensitive to the input waveform. It needs to line up
with the permanent magnets properly and you're unlikely to align them
accurately enough while installing multiple motors together.

Motors can almost always handle more power than you'd expect but only
for very short periods of time. But, permanent magnet motors can be
damaged by trying to drive them too hard. They can be reasonably easy
to damage. I think you're best served to get the proper motor for the
job. But, sometimes the proper motor is expensive. So, I can see why
it might be handy to try to piece things together. Another option you
have is to try to find larger salvage motors. You can get 100kw
systems out of scrapped OEM cars and bankruptcy auctions. You can
probably extract decent sized motors out of wrecked hybrids. A
salvaged drive system or motor along with its controller can be gotten
for prices under $6000 - obviously depending on what you're getting.
Don't expect to get a Tesla Model S drivetrain for $4000 or anything.
;)

As for using the gauges, it can be a learning curve. I don't know of
anyone off hand who has utilized the gauges in your car but a car that
new almost certainly uses CAN for the communications. This is a
communications standard and plenty of people (myself included) have
experience with CAN and can assist with decoding the messages so you
can use your existing gauges.
