IMO, for us hobbyists, it makes sense to go with pre-built batteries from reputable manufacturers, or to contract with someone experienced to custom build a battery.
Yeah, it costs more, but you're fairly likely to get something that works reliably and lasts. You also avoid the risk of unpleasant or fatal accidents during battery assembly.
