Following up on my own post: evince uses gdk_screen_get_{width,height}_mm in calculating the display's dpi, and the Gnome docs note that "on some X servers this value will not be correct". They're right! For my generic lcd, they return 40959x6552 mm. That's what--the size of a tennis court?
Replacing the "intel" driver by "vesa" fixes it. The joys of experimental drivers :)
