I asked to my friend with fedora 17 and these packages to do the same:
poppler-0.18.0-2.fc16.x86_64
evince-3.2.1-2.fc16.x86_64
xpdf-3.03-1.fc16.x86_64
Even my friend got bad rendering from evince and no problem with xpdf.
I think that we can start to think about this as an evince bug, don't you?

poppler 0.16 is an old version, current stable version is 0.18.
I see the same incorrect rendering as Massimo here (Debian sid) with
poppler 0.18.4
evince 3.3.90
