It is a goal of poppler to try to get the text as in the pdf, the problem with most pdf files is that they specifiy where the glyphs are put in the page, not the text... so there is no real text on those pdfs... and poppler (the library evince uses to render pdf) has some heuristics, similar to the ones used in OCR programs, to group glyphs into text... That being said these heuristics cannot be perfect... But they can certainly be improved.
