Benjamin:
It seems that Ubuntu doesn't compile the Evince xps support, because libgxps
is not in the list of dependencies
http://packages.ubuntu.com/precise/evince
however, they build libgxps
http://packages.ubuntu.com/precise/libgxps2
I guess you can open a bug report in launchpad to request Evince xps support
