Pat,
There is an option in Edit > Save Current Settings as Default that does what
you want. You should use it with a PDF without the side pane as you like, so it
will turn into the default value. This way, everytime you open a new PDF, the
side pane won't be shown.
However, for PDF that you already have open, it will be opened with the side
pane as the last time you viewed the document. You can use the command
gvfs-set-attribute to disable the side pane. For example this command will
disable the sidebar from all the .pdf documents in a directory
for i in /path/to/your/documents/*.pdf ; do gvfs-set-attribute $i
metadata::evince::sidebar_visibility "0"; done
