In Evince 3.x, the Full Screen Mode (F11) uses the whole space
available.  There is currently a bug to handle the toolbar [1], which I
think should be fixed instead of adding a workaround to the Presentation
Mode (F5).

As a side note, I just tried Acrobat Reader (in Linux), and I could not
make it show two pages in full screen. It always changed from dual to
single page when switching to full screen.
