Hi Matthieu,
It was possible in the past, but not any more. In the old design it was
possible to aggregate buttons to the toolbar. This feature was not used
by most of the users.
When Evince adopted the new design to go with the new GNOME Human
Interface Guidelines [1]. The fact that the title bar and menu/tool bar
are compressed into a single bar makes the space scarce to add new icons.
I can suggest to use shortcuts (Ctrl + and Ctrl -) to zoom in and out.
In recent versions of Evince press Ctrl ? to know all the shortcuts
available.
