I think there have been people who have worked on this, you might want
to send a message to one of the gnome developer lists or something.

Well, I think getting the gnome libs down small enough to fit is
possible (since I believe people have done it?), but I can't say for
sure whether or not getting Evolution to fit on there as well is
possible. I'd say it probably depends on how small you can get all of
Evo's dependencies down to ;-)

I'd definetely say this is no 5-minute job. It may not even be possible.
