Currently, this is in the preferences dialog, where you can select the addressbook you want to autocomplete your contacts from. A hang on evolution usually means the death of the backend, in your case probably e-d-s or evolution-exchange. It cannot decide if it got the new mail from the server, or from another store. Move to a different store always means, delete it from source store and append it to the new store.
