gconf entries are not removed when the account was removed.
You need to shutdown gconfd using the command
gconftool-2 --shutdown, and use gconf-editor and remove the 
sources corresponding to Exchange folders, under
apps->evolution->addressbook, apps->evolution->calendar and
apps->evolution->tasks.
