Thanks for your reply Andre. I created a new user withing Fedora and
found that the spell checking worked fine for them so it was something
to do with my profile (user).

I tried deleting the file you mentioned but did not have any luck so I
removed all .gconf entries within my home directory relating to
evolution and gnome-spell, recreated my evolution account, then it began
working again. Still not sure what caused it unfortunately.
