I recently had a very similar experience with evolution 2.6 on FC5. I
also tried multiple debugging options, but didn't really see anything
too helpful.
My crashes were pretty random, occurring anywhere from 30 seconds to 10
minutes after starting evolution, whether I was actively using evolution
or just letting it set.
I eventually fixed this by just deleting my .evolution folder, and
letting it be re-created.
That may not help us understand what was actually causing the problem
(corrupt cache? I tried deleting the cache folders. maybe something
else), but it may get you back to a usable state.
