Hi,
for a mail it's in Edit->Plugins->Mail notification->Configuration (or
simply right click over the icon in the notification area and choose
"Properties").
For appointments, it's part of the alarm, evolution-alarm-notification
expects URL of the file to play there, if not there, then it just beeps.
No default for this.
