Evolution marks the mail as deleted when you press delete, but it doesn't disappear completely until you empty trash. You can do that for a specific folder by pressing Ctrl+E in the folder or selecting Folder->Expunge, or you can do it for all folders by selecting File->Empty Trash. You can also set evolution to automatically empty trash when you quit somewhere in the preferences. This is standard behaviour for IMAP folders. For reasons best known to Microsoft, they implemented this in a similar but incompatible way, by moving mail to a folder called "Deleted Items" when you delete them. By the way, please start a new mail when writing to the list, rather than repying to an old mail or a digest. It makes the mailing list easier to navigate and organize.
