They are in Gconf. But please don't go grubbing around in the .gconf file heirarchy and think that copying the info in there will work - it probably won't, and has a high possibility of corrupting things. Evo was never designed to be cloned or synced in this way (or any other), so any methodology you create will be a total hack and will ultimately result in you corrupting everything. The best way, as others have said, is to use IMAP - you can then copy the mail contents locally (i.e. tick the box that says "Synchronise remote mail locally") so you have a copy when you are not online and then let it sync back when it can.
