That's not an Evo issue, it's to do with the Gnome 3 file manager.  The
easiest way to change it is to open up Nautilus, find a PDF and right
click on it and select Properties.  Under the "Open With" tab and you
will see listed all the possible applications - select whichever one you
want and click "Set as default".

Those are GTK dialogue boxes so again, not particularly an Evo issue.
But my experience is that it remembers the last directory you used, even
across different compose instances, i.e. not the same behaviour as you
see.  What desktop are you using?
