BTW I also use KDE (on Fedora).
"openSUSE packaging works" the same way as every other mainline distributions packaging. (a) "have to update the entire Gnome system" - Evolution is a GNOME application, it depends on GNOME libraries so updating Evolution to 3.8 is going to bring the 3.8 versions of the GNOME libraries it depends on, and the libraries those depend on... (b) "I'm using KDE, so I don't have all of Gnome installed". But you are using Evolution currently? Then yes, you have almost all of the GNOME *platform* installed already.
