Hi,
there is no such (direct) option. One way is to use filters to either
assign a color or a label to a new message, but it will never unset
the property on its own, thus you might also have something to unset
it (using for example labels lets you unset it from a popup menu). Of
course, this is not that convenient as just the automatically used
bold font.
I suggest to file an enhancement request at https://bugzilla.gnome.org
(search for one first, in case it's already filled), to have a style
property of the message list for a font color of the new messages.
Someone may pick the bug report and provide a patch for you and once
it's done you would be able to define the color from the outside of
evolution. Please sent here a bug link, for a future references.
