(Note you didn't do the same with evolution-data-server…) Try checking the installed packages with debsums. The fact that it also failed with a new user points to a corruption affecting the whole system. My guess is that it is a dbus-related one, and is being triggeres by evolution because since evolution is a heavy dbus user. Looking at the system logs about "foo received a SIGSEGV/SIGCHLD/etc signal" may help too.
