Rather than go through it all again can I refer you to the thread starting at: https://mail.gnome.org/archives/evolution-list/2017-September/msg00075.html or the really ancient version starting at https://mail.gnome.org/archives/evolution-list/2013-January/msg00076.html and the bug referenced in these at https://bugzilla.gnome.org/show_bug.cgi?id=738247 The bottom line though is that the MTA will add at least an IP address when it receives an email, no matter what the MUA does (these discussions were more about adding hostnames not IP addresses). If you don't want your "real" IP address added, then you will probably need to use a VPN to hide it.
