The "standard" procedure to change autentication mode on Gmail have properly 
worked for me.

Evolution 3.36.5-0ubuntu1
Ubuntu 20.04.4 LTS

Gmail account used in POP and SMTP mode.
I Only did (over account properties screen -both items, send and receive 
email-) searched for "autentication method" and discover the OAuth2, then
accepted and allow (via pop-up) it in my Gmail account configuration.

I guess, and only guess, the WebKitGTK is somehow malfunctioning foryou. Maybe 
if you run Evolution from a terminal, it'll be shown there.Your 3.38 is
very old, I do not recall precisely, but it's possiblethere were some issues on 
either side. I'd still suggest to update theEvolution (and evolution-
data-server) to a newer version.
If your distro doesn't provide any newer version, then update to thelatest 
stable version provided by the Flathub.org. It has itsdownsides, but you
