Interesting. I have found "Body or Subject contains" to be OK for
most people. Although, maybe "Message contains" would be a better
default (i.e. match the words anywhere).

Thing is, Evolution keeps a live widget for all the folders you open.
When you switch between a folder that and another one, Evolution just
hides the message list for one folder and displays the one for the
other; so, no recomputation of the message list is necessary.
Instead, when you change (or remove) the search criterion, Evolution
has to rebuild the message list. That's why it gets slower in that
case.
