How much evolution uses will depend on how much the users use it.

I've about 100MB of email and its using something over 20Mb of non-shared
system resources on an intel box to run one instance.  With none
though its still in the range of 10Mb.

Disk resources are mostly equivalent to mail content plus about 20-30%
for disk-based indices (if they are enabled).

Anything slower than a 500mhz box feels gradually more sluggish - 
although its pretty snappy on that (for one user!).  Thats
the slowest box i've run it on anyway.

The GUI is pretty greedy on network bandwidth, that might be
a limiting factor more than some other things.

I would say: if you can run netscape communicator on it, evolution
will probably be fine.  Their resource usage is similar (although i
find netscape is far more likely to go bezerk and chew up your system).
