No and/or maybe yes. It depends on how the fax software your company is using works. If it depends on an Outlook plugin, then no, it won't work with Evolution. On the other hand, if it involves software that is installed on the Exchange server, then there is a way to send email through the Exchange server via SMTP to a non-SMTP address, although it's complicated.
